Sheets are the most versatile form of EPS. Line a crate with them and you have a shock absorbing wall on every side; lay them between layers of product and nothing rubs; cut a slot and a panel or screen sits in it without moving. The closed cell structure also blocks heat, so the same sheet that cushions a shipment also slows temperature change inside the box, which matters on a summer road trip across the Emirates.
